Preparing a healthy and satisfying breakfast for the kids.

Today’s Breakfast Menu: Potato Salad and Garlic Bread

I know it might sound unconventional to serve potato salad and garlic bread for breakfast, but hear me out. Both dishes are nutritious, easy to prepare, and most importantly, they appeal to even the pickiest of eaters. Plus, they offer a great balance of carbs and protein to fuel the kids for a busy day at school.

Potato Salad: A Hearty Start

Potato salad might traditionally be seen as a side dish, but it’s versatile enough to shine at breakfast. Here’s a simple recipe that makes a filling and healthy breakfast:

Ingredients:

2 medium potatoes, peeled and cubed
1/2 chicken breast meat cut in cubes
Mayonnaise


Instructions:

Steam all ingredients. Drain and let cool.
In a large bowl, add in mayo, cooled potatoes and chicken breast meat as well as the chicken gravy. Stir to combine.
Season with salt and pepper. Chill in the refrigerator until ready to serve.
This potato salad is creamy and flavorful, and packed with a dose of protein.

Garlic Bread: A Crispy Delight

Garlic bread is another crowd-pleaser. It’s quick to prepare and provides a crunchy texture that pairs well with the creamy potato salad.

Ingredients:

1 loaf of homemade wholemeal bread.
3 cloves of garlic, minced
1/4 cup unsalted butter, softened
Salt to taste

Instructions:

Preheat your oven to 375°F (190°C).
In a bowl, mix the minced garlic with softened butter.
Slice the wholemeal bread and spread the garlic butter mixture evenly on both halves.
Place the bread on a baking sheet and bake for 10-12 minutes, or until the edges are golden brown.
