Butternut Squash Spring Onion Cheese & Egg Bread 南瓜葱油起司蛋面包



As usual I use my favourite bread dough recipe to bake this bread.  And of course the bread dough I use my breadmaker to knead it.  After done, I divided the dough into 98g small dough to bake this bread.  And the outcome is very very big.  I cut it half and give half to my mom.  For the topping I put some seaweed spread.  I cook my another half butternut this morning for my boy to serve with rice.  However, he has no appetite to eat, so I use some as filling of my spring onion bread.

Filling :
Egg
Cheese slice
Mayonese
Minced meat butternut squash  

Topping :
Seaweed Spread

Fish Noodles 鱼汤面



Today go to wet market to buy 2 pcs big fish bones to cook fish soup stock.  As usual I use it to cook my bb porridge or noodles for my little one at home.

Fish Soup Base Ingredients :
2 fish bones
2 Celery
3 tomatoes
Spring onion
Ginger
Black pepper
2L water

Method :
Put all ingredients into a cooking bowl and cook for roughly 1:30 hrs.

Fish Noodles :
Black fungus
Fish fillet
Tomato
Ikan bilis (Cooked)

Seasoning :
Sesame oil
Black pepper
Light soy sauce

Sweet Potato Pandan Swiss Roll



Egg yolks:
(A) 
• 63g egg yolks
• 22g sugar
• 25g corn oil
• 29g pandan juice
• 48g cake flour

Egg whites:
(B) 
• 105g egg whites
• 1.2g cream of tartar (optional)
• 44g sugar

Filling:
(C) 
• 150ml uht cream
• 480 sweet potato puree
• sugar


Pandan juice:
(D)
• 29g pandan juice

Directions:
• 5 pandan leaves
• 58g coconut milk (I use my baby formula milk)

Method:
1) Clean the pandan leaves under running water to remove dirt. Cut the leaves into small pieces with scissors. Add the leaves at a time, and pulse the blender several times to mince them. Once the leaves are minced, add coconut milk to strain the juice through a fine mesh strainer to remove any solids.

2) In a bowl, mix (A) egg yolks, sugar, corn oil and pandan juice. Sift in the cake flour and whisk until smooth.

3) In a separate bowl, whisk (B) egg whites until foamy then add cream of tartar and sugar a little bit at a time until to a thick and stiff peak stage, about 3 minutes.  

4) Folding cake batter into a whites, and mix until incorporated. 

5) Pour the mixture into the 32cm x 27cm prepared tin with baking parchment and use a spatula to smooth it evenly into the corners. 

6) Use a large baking pan for a hot water bath and Preheat the oven to 160°C and Bake for 35 minutes.

7) Once cooked, remove from oven and leave to cool for 5 minutes.

8) Carefully move out the baking sheet with cake, roll up the cake while it still warm.  

8) In the meantime whip the (C) uht cream until it is just thick enough to hold its shape and add sweet potato puree.

9) Once the cake is cool, unfold the cake and spread the whip cream over the cake for filling and roll up again.

10) Refrigerate it for 30 minutes before serving. 

Helpful Tips:
1) It's fine to use cold eggs for baking, or you still can use room temperature eggs. The temperature of eggs will affects the baking time, and cold eggs will take longer to bake.
2) Chill the bowl and whisk in the freezer before whisk the egg whites and making whipped cream.
3) Do not over or under-beat the egg whites.
4) Whipping cream doesn’t whip up as thickly as double cream.
5) Cutting off the crusty edge from the two long sides.
6) Do not bake the cake quickly at a high temperature and don't remove hot cake out of a baking pan. otherwise the cake could crack on top.
7) Fold the batter into a egg whites. Cut the egg whites into the mixture. Don't stir and never use an electric mixer for this.
8) Beating egg whites is a very important process, It will help your cakes rise with perfectly.
9) Cover with foil after a few minutes if the cake of top starts to get brown and continue rising nicely with a golden top.
10) Please understand that everyone's oven work differently.
You should also check the temperature of your oven. if not, your cake won't rise well.

Homemade Moon Sand



My daughter always ask me to bring her to beach and she wanna build a huge sand castle, but unfortunately there's no nice beach at my hometown in Sandakan  So last weekend I decided to make her colorful moon sand and let her have fun in her weekend.  Well, she definitely have lot of fun.  Eventhough I knew this will be quite messy but that's okay as long as she enjoy it.  To make this moon sand, you can use your home expired flour and baby oil.  But I don't have it, so I bought the cheapest flour at market.  

Ingredients :
4 cups flour
1/2 cup baby oil
Food coloring (Optional, if you want to make colorful sand)

Method :
Just mixed all ingredients together and have fun!

Steam Chicken Floss Bun



Steam the bread dough make chicken fross bun for my daughter to bring to school tomorrow.  The bread dough recipe I've shared it at my previous blog post, you may check it out here : Cheese wholemeal bread dough

I've put mayonnaise spread and chicken floss inside the bread  as well as top of the bread.   I use low fat mayonnaise.

Disney Winnie The Pooh Chicken Pie




Yesterday is weekend I've prepared bread dough and pie pastry to make pie and bread for my family and daughter school meal box.  Since having a small baby at home, I've not much time to prepare homemade food for my 5 years old daughter.  Therefore I make a batch individual pack of pie pastry and bread dough and store at my freezer.  So they can just steam / bake it whenever they like.  I like my family always have healthy homemade food no matter how busy I am.  In order to make my daughter enjoy the food I prepare for her, so I make a Winnie The Pooh on top of the pie.  She can't wait to eat this after her lunch.  Once she quickly finish her lunch, she ask my permission to eat the Winnie the pooh pie.  Hahaha....

Steam Tuna Cheese Wholemeal Bread


This is super yummilicious!  I use my homemade wholemeal bread dough to steam 6 buns.  And tadaa....I use the bun to make this yummy cheesy tuna bread.  Below is the ingredients of my wholemeal cheese bread dough :

Steam Tuna Cheese Wholemeal Bread
Make a Cross (X) hole at middle of the bun.  Put some cheese sauce, tuna.  Lastly top up a piece of cheese slice and steam for roughly 7-10 mins until the cheese melted. 

Cheese Bread Dough
Ingredients :
255g milk
55g butter
70g sugar
1/4 tsp salt
1 egg
1 slice cheese / 15g cheese
370g organic bread flour
80g organic wholemeal bread flour
** You can use non-organic bread flour, depend on your own preference **
3/4 tsp Instant Yeast

Method :
Put all ingredients in order to bread maker and let it knead to be a dough.  
Divide the dough into small portion e.g 55g per dough.
Put the dough into small freezer plastic bag / ziplock bag and store in freezer
You can either bake or steam the bun whenever you like.  I like steam method as it is not heaty to my kid and baby.

Sweet Potato Steam Cake





Well, I intro a lot of finger food / baby snacks for my baby at home lately since he loves to eat.  So, what is the best food for him?  Answer : Sweet potato.  I browse thru a lot recipe and I finally got one and I done it by 2 method - Steam and bake.  Both he also loves it.  Here is the recipe I got from other link - Recipe Sweet Potato Steam Cake .

Baby Cheese Cracker


Chinese New Year is coming soon and I do a lot of baking recently for CNY.  I am thinking it is not fair for my 13 months boy to see the adults bite delicious homemade cookies, but he has nothing to bite.  Therefore I bake him variety baby bites for his 2nd CNY celebration with family.  Homemade always the best.  The above picture is baby cheese cracker. I cut into small pcs especially for his small mouth.

Ingredients :
4 oz grated cheese
1/2 cup All Purpose Flour
2 tbsp butter - room temperature
2 tbsp ice water
1/4 tsp salt (optional)

Method :
  1. Preheat oven to 170 degree C.
  2. Using food processor or mixer, add all ingredients to combine to become a dough.
  3. Wrap in plastic wrap and refrigerate just until the dough has firmed up a bit.
  4. Roll out and cut into 1 inch squares.
  5. Place on baking sheet and bake for around 20 mins.
I didn't bake it too dark cuz I want to be soft texture instead of crispy.

Below is type of CNY teething biscuits I bake for my 13 mths baby - PURELY HOMEMADE!


Egg York Milk Biscuits Ingredients :

2 Egg yorks
15g Formula milk
5g Potato starch

Method :
  1. Beat egg york until the color turn a bit lighter.
  2. Add in formula milk and potato starch and beat until form a dough.
  3. Put batter into plastic bag and squeeze a little bit out as per picture above.
  4. Preheat oven at 150 degree c and bake for roughly 10 mins until little golden brown color.
